Kuragakoi refers to sake held and slowly aged within the brewery's own cellar, and Endo Shuzojo's Keiryu Kuragakoi develops quiet complexity through in-house maturation in Suzaka, Nagano. Produced with Shinshu mountain spring water by this 1864-founded brewery, the extended cellar time softens the rice character into layered, contemplative depth rarely found in unaged expressions.
