Released directly from Endo Shuzojo's cellar after a summer of quiet aging, this Keiryu Kuradashi Junmai Hiyaoroshi reaches peak maturity in autumn as temperatures cool, its once-vivid rice character softened into a rounded, harmonious whole. Brewed with Shinshu mountain spring water by the 1864-founded Suzaka, Nagano brewery, it captures the depth that patient cellar aging and seasonal timing uniquely provide.
