Named Hyakunen no Kodawari, or One Hundred Years of Dedication, this junmai is made from Nippon Bare at 70% polishing at the Gifu kura that pioneered Japan's modern koshu movement. Nippon Bare is the brewery's cornerstone rice, chosen for its ability to support long aging.
