Brewed by the yamahai method with Omachi rice, this junmai follows the Shimane tradition of soft-water fermentation that produces gentle, rounded sake. The yamahai process adds a characteristic lactic depth and elevated acidity to the natural umami of Omachi, giving the sake both complexity and backbone.
