Description
Kakuyoku Namachozozake is a cold-storage aged sake, bottled raw after pressing and stored at near-freezing temperatures throughout the aging period to slow maturation while preserving the freshness and aromatics of unpasteurized sake. The namachozozo method applies a single pasteurization only at bottling, unlike standard twice-pasteurized sake, giving it a slightly more vivid character than fully heat-treated sake while providing greater stability than a fully raw product. The kakuyoku name, evoking crane's wings or soaring flight, suggests a sake of elevated, graceful character.
