Aya no Minori rice polished to 75% forms this Kagamiyama saijo-jikomi from Koedokagamiyama Shuzo in Kawagoe, Saitama. Saijo-jikomi is a multi-stage blending method, and this expression draws on the Saitama tradition of producing clean, refined sake in the historic Koedo castle town area.
