Kagamiyama is the revival of a sake brand that dates to 1875 but fell dormant when the original brewery closed in 1999; local voices called for its return, and in 2007 Koedo Kagamiyama Shuzo was founded in Kawagoe, Saitama Prefecture, making it one of Japan's rare Heisei-era breweries. From the outset the new brewery committed to three principles: small-batch production only, pure rice classified sake only, and traditional handcraft methods only. Crafted primarily from sake-suitable Sakemusashi rice grown in Saitama, the daiginjo has earned a gold medal at the National New Sake Appraisal.
