Yamada Nishiki polished to 50% is the basis of this daiginjo from Saitama's sole urban sake brewery, revived in 2007 in Kawagoe using Chichibu mountain subterranean water and traditional hand-crafted methods. The brewery restricts its lineup entirely to tokutei meisho-shu grades, emphasizing quality over volume.
