Description

Kioke (wooden barrel) jikomi junmai from Ota Daita Shuzo in Mie, fermented in historic Showa-era cedar barrels restored for traditional brewing. Polished to 60% and aged to 15% alcohol, this style earned the top gold prize at the 2013 Kanshu Contest, with a soft, deep umami and subtle complexity from the wood.
