Brewed in Akita Prefecture using locally grown Miyamanishiki rice from the Kyowa-Ichinowatashi district, this junmai ginjo from Chiyomidori expresses a gentle, settled umami with medium-bodied balance. The house yeast contributes a soft, composed character shaped by Ou mountain spring water and cold-climate brewing conditions.
