Junmai Daiginjo Udatsu takes its name from the udatsu, the distinctive raised firewall eaves found on historic merchant houses in Mino, Gifu, symbolizing wealth and prestige. Crafted by Kosaka Shuzojo as a Junmai Daiginjo, it undergoes highly polished rice milling and pure rice-only fermentation, resulting in an elegant and fragrant expression of Gifu brewing tradition.
