This three-year aged junmai daiginjo from Kusumi Shuzo allows Kame no O rice to develop extraordinary complexity through patient cellaring in Niigata. Extended maturation deepens the color slightly and adds layers of dried fruit and umami while retaining the rice's characteristic clean structure.

In 1833, the first generation, Kosaku Kosu, was founded. For more than 170 years since then, "Sake is the wind of local rice, water, humanity, and nature," and use the natural water designated by Niigata Prefecture, which springs in the sake brewery, and is polite. It is carefully brewed.
