Junmai Daiginjo Fukayashuku Kyu is a pure-rice daiginjo from Fujihashi Fujisaburo Shoten, a brewery founded in 1848 in Fukaya City, Saitama, drawing inspiration from the historic Nakasendo highway post town of Fukaya-juku. Rice polished beyond 50 percent ferments without added alcohol to produce the refined ginjo fragrance and silky texture associated with the daiginjo class, while the Kyu designation signals the ninth iteration or a premium tier within the Fukayashuku line. The Nakasendo heritage of the town lends this sake a historical resonance rooted in Edo-period craftsmanship.
