Description

Yamahai fermentation applied to Wakamizu rice milled to 70% gives this junmai a layered, mountain-brew character with extended low-temperature aging in the cellar across multiple seasons. The result is a slow-built umami depth and a clean, high-acid finish that rewards both cold serving and warm.
