Japon is a junmai sparkling sake with fine bubbles and low alcohol (8% ABV), made with the brewery's own organically grown rice in Kameoka, Kyoto. The highly active fermentation results in a sake meter value of -60 and an acidity of 5.8, giving it a lively, refreshing character reminiscent of natural sparkling wine.
