Description
Chiyo Nishiki rice forms the base of this junmai from Wakashimizu Shuzo in Hirata Village, Fukushima, named after the Heian-period poet Izumi Shikibu. The brewery presses all its sake through traditional wooden vats (funashimi) without exception.
