Description

Yamada Nishiki polished to 45% is brewed with rare Amosu spring water from the Amou Pass on the Hida-Shirakawa border for this Shizenhakkogura junmai daiginjo. The ultra-pure hard water drives vigorous, natural fermentation, resulting in a clear, elegant sake with light, clean flavor and gentle fullness.

飛騨と白川郷の境にある『飛騨最後の秘境』といわれる天生峠(あもうとうげ)。500年もの歳月を経て湧き出るこの『天生水(あもうすい)』には、数々の言い伝えがあり、中でも時の修行僧がこの水を飲み、水浴したことで、万病をいやす神通力を得たのだとか。その力もあり、また酒造りに最適な純度の高い硬水で、極めて旺盛な発酵力をもった酒に仕上がりました。
