Hida Homare and Hitomebore are blended at a 68% polish for this nigorizake known as Hida no Dobu, which contains so much unfiltered moromi that it is described as being eaten rather than drunk. The extremely thick cloudiness, concentrated sweetness, and 18% alcohol make it one of the most distinctive unfiltered sake expressions from Gifu.
