The sanhai-jikomi (three-stage mashing) process underpins this honjozo namazake from Zuikan in Hiroshima, adding texture depth while the raw, unpasteurized bottling preserves freshness and a lively, immediate character. Arida Shimizu spring water from 450 meters elevation provides the clean mineral base. Seasonal availability limits production of this unheated release.

It is located in the middle of the JR Fukushio Line, which connects Fukuyama City to Miyoshi City, which is close to the Chugoku Mountains. The prepared water is one of the best brewing water in the prefecture, the Arita spring water (medium soft water), the latest brewing management of small quantities, and the upper tank are old -fashioned turret.
