Honjozo Taiheizakura uses Fukushima rice polished to 65% from Taiheizakura Shuzo in Iwaki, Fukushima. The brewery uses all-Fukushima ingredients including local sake rice and the utsukushima yume yeast, and slow winter fermentation in the coastal Iwaki climate shapes this clean, approachable honjozo.
