Homaregaijin Junmai Ginjo Murokanama is an unfiltered, unpasteurized release from Maruo Honten in Kotohira, Kagawa, brewed with Yamada Nishiki at 60% seimaibuai. The brewery uses traditional wooden koshiki for steaming and draws on the unique dual-character water of Hofunno Ike pond, producing a sake with strong acidity and firm, assertive umami.
