Description
Herun Junmai Ginjo is a fragrant, additive-free junmai ginjo from Kimpo Shuzo in Shimane Prefecture, named for Lafcadio Hearn who made the Matsue region his home and documented its ancient culture. The rice is polished to at least 60% remaining, and the ginjo fermentation at low temperatures produces elegant floral and fruity aromatics. Shimane's cool San'in climate and soft water support the delicate and refined character of this expression.
