Description
Rice polished to 65% forms the basis of this honjozo from a Saku, Nagano brewery that has brewed since the late Edo period. The Saku basin, at approximately 700 meters elevation, provides extremely cold winters and clear water well suited to the slow fermentation that defines the brewery's range.
