This junmai daiginjo from Kato Yoshiaki Honke uses Yamadanishiki rice polished to 48%, applying the king of sake rice to produce a premium expression of the Hatomasamune brand. Fermented slowly in Aomori's cold climate, the highly polished Yamadanishiki delivers refined melon and floral aromatics alongside a silky, polished texture.
