Yamada Nishiki is fermented in the moromi bags and allowed to drip by gravity into tobinbin (18-liter bottles) without pressing, a technique used by Enoki Shuzo to produce their competition-grade daiginjo. This 28th-anniversary commemorative release captures the delicate, pristine character extracted only through bag-hanging.
