Description

Enoki Shuzo was founded in 1899 on Kurahashijima Island in Hiroshima Bay, a location whose island microclimate and soft Seto Inland Sea basin water became central to the brewery's identity. In 1974, Enoki became the first sake brewery in modern Japan to produce kijoshu, a twice-brewed sake in which existing sake replaces the water in a new mash, dramatically intensifying richness, color, and complexity. The Hanahato Nigorizake is built on this kijoshu foundation: the unfiltered, cloudy expression carries a dense, creamy texture alongside the elevated acidity and fruity depth that kijoshu methodology imparts. The 'Hanahato' kijoshu expression has earned Gold Medal recognition at the International Wine Challenge more than ten times over the past two decades.
