Hakuyocho Tobintori (斗瓶取り) Daiginjo uses the tobintori (斗瓶) method, collecting only the finest shizuku free-run sake in traditional 18-liter containers for exceptional purity. From Ebara Shuzo Honten in Kotouramachi, Tottori (founded 1893) at the foot of Mount Daisen, this ultra-premium collection method yields the most delicate, pristine character of the daiginjo moromi.
