Yamada Nishiki grown in Okayama is milled to 40% for this daiginjo, yielding a fruity aroma alongside a refined, dry finish with a surprisingly soft sweetness on the palate. The brewery draws from the Ashimori River aquifer, the same water historically used by Toyotomi Hideyoshi's forces, and has earned forty consecutive top prizes at the Okayama Prefectural Jizake Competition.
