Brewed at Uehara Shuzo in Shiga with house-cultivated wild yeast and the kioke tenbin wooden-vat balance pressing method — a technique used by fewer than six breweries nationwide — this junmai exhibits the winery's signature rich umami and silky mouthfeel. Warm temperatures or room temperature bring out the full character.
