
Description
A junmai daiginjo from Towa Shuzo, the only sake brewery remaining in Fukuchiyama, Kyoto, revived in 2011 under a female toji after near closure. The brewery uses granite-filtered well water and a traditional Edo-period wooden building to ferment with local rice through long, low-temperature fermentation.
