Description
Junmai daiginjo brewed from Fukui's own Koshi no Shizuku rice polished to 40%, crafted by Tajima Shuzo (Fukuchitose label) which has maintained yamahaii brewing traditions for over 170 years. Koshi no Shizuku is a Fukui-origin variety created from a Hyogo Kitanishiki and Miyama Nishiki cross, known for mild, smooth flavor. The yamahai method builds deeper complexity and backbone into the sake.
