The Fujimasa Junmai Ginjo Homarefuji Nakadori from Fujimasa Shuzo uses Homarefuji, Shizuoka's original proprietary sake rice variety, with the nakadori (middle fraction of the press) extracted for maximum balance and clarity. Founded in 1866 and operating from the Asagiri Plateau at 900 meters near Mt. Fuji since 2011, this brewery uses Mt. Fuji spring water and the region's highland terroir to give Homarefuji its most expressive platform.
