Denshin Natsu is the summer expression in Ippongi Kubo Honten's acclaimed four-seasons series, pressed entirely by fukurozuri: moromi is placed in cloth bags and hung freely so only the drops that fall under gravity are collected, with no mechanical pressure applied. The rice is Koshinoshizuku, a Fukui-exclusive variety with a limited annual production of approximately 2,000 bales, polished to 45% and bottled unpasteurized. Vivid and alive from the first pour, it offers a full-bodied yet transparent aromatic profile with lush fruit freshness and a clean, expressive finish that fades as quickly and brilliantly as a summer evening.
The pinnacle of sake — pure rice, no added alcohol, extraordinary precision.
