Description

Fumoto (foothills) Ginjo is polished to 55 percent at the Nagano brewery in the North Alps foothills, where the brewing water derives from glacial snowmelt. Contract-grown local rice is self-milled at the brewery, with aroma kept deliberately understated to highlight the soft, grain-forward umami.
