Chiyokotobuki's Daiginjo Koshu is a matured aged sake crafted from Dewa Sansan at daiginjo-grade polishing. Brewed at Sagae, Yamagata with the famed hard water drawn from below Mount Gassan, then aged over extended years, this rare expression develops amber depth, dried fruit complexity, and a long, contemplative finish.
