Daiginjo from Ito Shuzo in Suwa, Nagano, made from locally grown Miyama Nishiki polished to 49%, brewed with underground water from the Kirigamine highlands. The brand name Yokobue references a tragic Heian-era love story, and has been the brewery's signature since its founding in Suwa. Miyama Nishiki's understated aroma and fine grain structure support the refined, clean style of this daiginjo.
