Kyoto's own Iwai sake rice, polished to 35%, is fermented without filtration, water dilution, or pasteurization in this muroka namagenshu junmai daiginjo. Produced at Kyoto's oldest surviving inner-city brewery, established in 1726, it presents a complex interplay of sweetness, acidity, and lingering fruity aroma drawn directly from the unprocessed press.
