Yamada Nishiki from Iga, polished to 40% and fermented using groundwater drawn from the brewery's own well in Mie's Iga Basin, this daiginjo earned a gold prize at the National New Sake Competition (Zenkoku Shinshu Kanpyokai). Fragrant and rich, it balances refined sweetness with clean acidity and a polished finish.
