Description

Daiginjo Azuminosodachi is a daiginjo sake from Nagano, named after the Azumino area, a fertile highland valley in the northern Japan Alps renowned for pristine water and premium sake rice cultivation. Daiginjo production requires polishing rice to 50% or less and fermenting at low temperatures to develop the highly refined, aromatic profile that defines the grade, and the genshu treatment means it is bottled undiluted at natural fermentation strength for extra concentration. Azumino's cold alpine climate and pure snowmelt water provide the foundation for this intensive high-end brewing style.
