Daidaiginjo Nasu from Houranshuzou in the Nasu area of Tochigi Prefecture represents an ultra-premium expression polished beyond the standard daiginjo threshold, with extreme refinement and meticulous craftsmanship. Nasu, in northern Tochigi, is known for its clean mountain water and fertile agricultural land, providing quality ingredients for high-grade brewing. The extreme polishing removes outer layers of the rice grain to reveal a concentrated, pure core that ferments into a sake of exceptional delicacy and fragrance.
