Dai Shinshu Chaokarakuchi (超辛口) Junmai Ginjo Nama is a super-dry, unpasteurized Junmai Ginjo from Daishinshu Shuzo in Nagano. Fermented to sharp dryness with self-cultivated yeast and Northern Alps snowmelt well water, this namazake release preserves the raw, cutting character of a boldly dry ginjo at its most vivid and intense.

We continue to make rice with a contract farmer with a tripod.
Brewing sake is a fusion with nature. Water, rice, person, and nature are integrated, and eventually reborn into a drop. We continue to brew the Shinshu wisdom. It is a "love thank -you" preparation to make thanks for the surrounding environment.
