Dai Shinshu (大信州) Junmai Daiginjo Shikomi No. 32 is a single-batch expression from Daishinshu Shuzo in Nagano, where each numbered shikomi (brewing batch) is crafted individually by hand. Using 100% Nagano contract-farmed rice with Northern Alps snowmelt well water and the brewery's self-cultivated yeast, this expression embodies the sake that moves people can only be made by hand philosophy.

After several decades, we use the melting water of the Northern Alps, which has been naturally filtered.
We continue to make rice with a contract farmer with a tripod.
Brewing sake is a fusion with nature. Water, rice, person, and nature are integrated, and eventually reborn into a drop. We continue to brew the Shinshu wisdom. It is a "love thank -you" preparation to make thanks for the surrounding environment.
