Description
A nakadori junmai ginjo from Tochigi, made with Miyama Nishiki rice polished to 50%, pressed by the gravity-drip shizuku method and sealed in to-bin vessels. Only the free-run middle portion of the press is used, resulting in a thick, round, and gently sweet expression with restrained bitterness and clean acidity.
