Ishikawa-prefecture rice polished to 50% forms this daiginjo from Kazuma Shuzo in Noto, Ishikawa, brewed with ultra-soft spring water of just 0.6 degrees hardness. The brewery mills all rice in-house with 1% incremental adjustments to polishing, producing a clean, transparent daiginjo with a composed, elegant structure.
