Chichibunishiki Honjozo Karakuchi is a dry-style honjozo from Yao Honten in Chichibu, Saitama, where a small addition of distilled alcohol brightens the aroma and sharpens the profile toward the crisp, food-friendly dryness the karakuchi designation signals. Chichibu's mountain water, soft and mineral-light from its origin in the forested peaks above the Arakawa River, supports clean fermentation with a refreshing finish. At over 270 years of operation, Yao Honten applies a deep institutional knowledge of regional brewing to even its everyday styles.
