Description

Chichibunishiki Junmai Nigorizake is a cloudy, unfiltered pure-rice sake from Yao Honten, a brewery founded in 1749 in Chichibu, Saitama Prefecture, drawing on soft water sourced from the Arakawa River system fed by Mount Kobuishi. Passing the mash through a coarse mesh leaves abundant rice solids suspended, giving the sake a creamy, opaque appearance and a rich, slightly sweet texture with gentle lactic notes. The junmai base, brewed without added alcohol, provides a full-bodied rice umami that integrates naturally with the cloudy lees.
