Bonki is a low-alcohol junmai sake (8% ABV) made with the brewery's own organically cultivated Yamada Nishiki, fermented to produce a white-wine-like profile with bright acidity and refreshing character. The name refers to an old wooden rice container, and the sake is best enjoyed well chilled.
