Yamada Nishiki is the foundation of this daiginjo from Nakao Shuzo in Ibaraki, Osaka, a brewery tracing its origins to the Muromachi period that presses sake by natural weight in traditional fune rather than mechanical pressing. The house yeast and 30-day fermentation contribute a polished, mellow dry character.
