Bon Junmai Ginjo Hiyaoroshi is an autumn-release sake from Saiki Shuzo, bottled without a second pasteurization after summer aging. The hiyaoroshi style results in a sake that is at once mature and vibrant, having mellowed through the warm months while retaining a lively edge. Fukui's cool autumns make this a natural seasonal highlight from the Bon lineup.
