Endo Shuzojo's Asashibori (Morning Press) series uses the fukurozuri bag-pressing method, where sake drips freely from hanging cloth bags under its own weight without mechanical pressure, yielding exceptional delicacy and purity. This honjozo namagenshu (unpasteurized, undiluted) from the 1864-founded brewery in Suzaka, Nagano, captures the raw freshness of the morning press with Shinshu mountain spring water at its most vital.
